Yes cows do canter.

The canter seems to me to be an efficient movement, as the cows stomach bounces up and down in rhythm with the canter.

Cows also gallop.

Cows trot, not pace. Cows don't have the structural ability like horses do to be trained to pace (or move their two legs on the same side together).
