Lobsters can swim both forward and backwards. They swim backwards when they are facing their prey. If the lobster were to turn around and swim away they would be vulnerable to their prey. So by keeping their claws out and facing their prey they can defend themselves.

"prey" refers to the animal that is being pursued, not the pursuer. In this case, the lobster is the prey, not the other way around.

Shrimp do not have fins to move in the water so they pull in their abdomen toward their body quickly. This motion propels them through the water but because of their configuration it means they are moving backwards.

The articulation of their legs makes a sidelong gait more efficient. However some crabs can walk forwards and or backwards (eg. the Raninidae, some spider crabs and some Australian mud crabs).

Its a reflex mechanism when they feel threatened to escape rapidly. It is completely automatic and they cannot control it.
