Actually, roosters are usually the only kind of chicken eaten. Hens are kept for egg laying and a few roosters stay on a farm to fertilize the many females. Since few are needed to keep the flock fertile, the roosters not eaten (There are a large excess of them after the eggs hatch) are sold to food processing plants.

Roosters, and hens, and chicks at that matter, will all eat eggs if they get the chance. It's a very bad habit though, as many chickens will learn to break eggs open if they start eating raw eggs. Eggs are very high in protein, and are, oddly enough, one of a chicken's favorite foods, if they are allowed to eat them. You should never feed them raw eggs, but cooked eggs are fine.

Usually hens, as roosters tend to sometimes do more running around, which makes them bonier.

Roosters are edible. They are just males of chickens so why not? Also they are juicier and plumper than chickens.
