Limes are an acid-based material. Acids are capable to form ions which are electrically charged. With this in mind, we already have the electrical charges and we only need the conductor material to generate electrical current. A metal bar can be used. But we have the same potential on this bar, and this is why we need some potential to conduce the electrical charges. We can put zinc and aluminium plates in its extremes (inside the lime) which will generate the potential required. Then, we can put a weak-power light in series to the bar to light it up!
