Of course there are variables like how ripe it was when purchased and just how hot your house is, but generally speaking an uncut pineapple should be OK sitting out for a couple to three weeks. If it's soft/squishy to the touch, it's gone bad. If cut and refrigerated, it will only last a few days.
When purchasing a pineapple, a good rule of thumb to determine the ripeness is to pull one of the leaves from the center of the pineapple top. If it comes out relatively easy with a gentle pull, it's ripe. If it doesn't, it's not.
