We only know of one sentient species, homo sapiens. One example is an insufficient basis upon which to generalize about how many fingers sentient species might have. So the question cannot be answered at present.

However, it seems that a single finger on a hand would not be very useful for manipulating objects and so would limit the development of such a species.

How many languages do each of the 20 million sentient species in the Star Wars galaxy speak?

There are 20 million sentient species in the Star Wars galaxy, so each sentient species (excluding humans) has its own native tongue, so there are 20 million alien languages for each one of them.

Will there be a Star Wars reference book that has all the info and descriptions of 20 million sentient species?

No. There won't be a Star Wars reference book that has all the info and descriptions of 20 million sentient species (because, in addition to the large sentient species portraits, each 1 1/2 page will give a detailed description of the sentient species of every shape, size, color, unusual feature, their histories, and what planet and moon they're from, and it will be 30 million pages in length).

Is sentient non-sentient and semi-sentient the three sentience levels of alien species in the universe?

No. Sentience is not one dimensional but five: cognitive, recognitive, sensory, inherent, and logical. Each of these has a range value therefore the measure of sentience is n5 variable value.

Do some alien races have multiple fingers on each hand?

How do you make 100 billion separate books of all the info of 10000 trillion sentient species in our universe with 100000 per galaxy?

To make 100 billion separate books of all of the information of 10,000 trillion sentient species (100,000 per galaxy) in our universe, you would need to begin by researching each species. Then combine the information using a computer.

How many sentient species are in a fictionalized version of the Andromeda galaxy?

There are at least 150,000 sentient species in a fictionalized version of the Andromeda galaxy (a spiral galaxy 2.5 million light-years from Earth, and is 150,000 light-years in diameter, and contains 150 billion stars (each star is orbited by an average of 9 planets and 170 moons; as well as asteroids and nebulae)).

How can sci-fi authors make all 100 billion reference books that has each all of the descriptions and info on 126000 sentient species in each one of the 100 billion galaxies in the universe?

It will be impossible when they make all 100 billion reference books that has each all of the descriptions and info on 126,000 sentient species (alien races) of all shapes, sizes, colors, unusual features, etc. in each one of the 100 billion galaxies in the observable universe. Also, it will be 189,000 pages long in each one of them. But for now, it is unknown.

How can authors make a Star Wars reference book that has all the info and descriptions of 20 million sentient species?

No. The authors, including Daniel Wallace, can't make a Star Wars reference book that has all the info and descriptions of 20 million sentient species in the galaxy, because it will be at least 30 million pages in length (1 1/2 pages for each of their large portraits, their species, their histories and what planet and/or moon they're from).
