Yes, knife scratches (steak or otherwise) can show up on melamine. Melamine is fairly hard, but not that hard compared to a knife blade.

White scratches don't show as bad
Both of these have benefits and losses. I know that the white MacBook's show every little mark that you make, but they don't show scratches. Aluminum MacBook's are apparently very good but show up lots of scratches.

I doubt they will let you bring a knife on the game show Survivor. It would be hard to pass through the airport with a knife, let alone bring it to a remote Survivor destination. Survivor has guidelines for what contestants can and cannot bring with them.
