You do not have to. It is recommended that you do, since mayo has eggs as an ingredient. Try cooking an egg then leaving it on your counter for a few days, MMmmm yummy. Personally, if the manufacturer suggests I refrigerate after opening I do so.

Is mayonnaise requires cool-room storage temperature?

Yes, mayonnaise should be stored in a cool room, typically in the refrigerator, to maintain its quality and safety. The cool temperature helps prevent the growth of bacteria, particularly after the jar has been opened. Unopened mayonnaise can be stored at room temperature, but once opened, it is best to keep it refrigerated. Always check the label for specific storage instructions.

How long will unopened mayonnaise keep unrefrigerated?

According to "The Association for Dresses and Sauces," commercially available mayonnaise can be left out of the refrigerator for a long time and still be safe. Apparently, the eggs used in commercial mayo are pasteurized, killing bacteria like Salmonella. Also, they say, commercial mayo is sufficiently acidic to be unfavorable to bacteria that may be introduced after opening the jar. I always assumed that Salmonella was the prime problem, but if you think about it, mayo sits on store shelves unrefrigerated for a long time, and there's no reason Salmonella couldn't grow then. TADS also says the reason refrigeration is recommended by the mayo jar is to preserve fresh taste.

How long is mayonnaise good for when its refrigerated and opened after the expiration date?

Opened mayonnaise can typically last for about 2 to 3 months in the refrigerator after the expiration date, as long as it has been stored properly and shows no signs of spoilage, such as off odors or changes in texture. It's important to check for any visible signs of mold or unusual separation before use. Always use a clean utensil to avoid contamination. If in doubt, it's best to err on the side of caution and discard it.

Why can ketchup mayonnaise and tartar sauce be kept outside of fridge in stores?
