It really doesn't matter.

However, salting softer vegetables before grilling and allowing them to sit for a while will draw moisture out of the vegetable and make them firmer and hold together a bit better.

Yes, we have to do that i order to wash off the dirt , sand and fertilizers. There is a possibility that it may contain harmful pesticides on its surface. We cant risk our hygiene.
