As she does not actually remember being a human after James bit her and turned her into a vampire. It is the only life she has ever known. Although it doesn't specifically state in the books her opinion of her predicament, I would assume that she has no issue with it and she may even enjoy living an immortal life. In a sense, she may even be thankful as she would have never met Jasper or the Cullens if she hadn't been turned.
