Yes, you can go on any ride at Universal Studios with a broken finger. This applies to both the Orlando and Hollywood locations. For your own comfort, a splint or cast is suggested in the event that you get jostled on a roller coaster. If you have a cast, travel with a plastic bag, which you can put over it on any water rides that you go on.
If you get the front of the line pass, you will not wait more than 5 minutes on any ride. I did it on a Sunday afternoon and covered every ride and attraction within 4 hours.

Nickelodeon is a cable channel it doesn't reside in any state.If you mean the Nickelodeon studios, they are currently in Hollywood, California. They were located in Orlando Florida. "Were" because they closed those studios in 2005. You can still visit the studios & resort in Orlando but they no longer tape programs there.

Thankfully, the only "rides" are historic wagon rides and horse rides into the back country. Rides purely for entertainment in this place are not only unnecessary, but would ruin the entire experience.
