O-levels are seen as being the same as a high School Diploma (which is what you need to get into University in the USA) Almost all universities will accept O-levels as adequate level of education for university or college entrance in the USA. You DO NOT need A levels to enter university in the USA. Most high school graduates in the USA are not as well educated as most o-level graduates in the UK. A levels are equivalent to the freshman year in universities in the USA. I know this because I know quite a few English kids (my own included) whose O-levels have been more than adequate to enter university in the USA. My son has an Applied Science Bachlor's Degree from Campbell University. He left school at 16 with O-levels. He came to live with me in the States when he was 18 and went straight to university. He graduated Summa Cum Laude. He is now an officer in the USAF.
It doesn't matter what GCSEs you choose. Take nursing at A level or at university.
Your A Level results will not be available through UCAS, however depending on the speed of serive on results day, UCAS will at some point update its "Track" facility to show the conditional offers which you have met, and whether the university has confirmed your place. Your College will receive your results, and will either hold them for you to collect or post them to you.
