Its because the chemical called ethylene gas that the fruit gives off as it ripens is held in the paper bag. That's why if you have one spoiled piece of fruit you should get rid of it because it will cause the other fruits to turn bad faster. This is where the phrase 'if one apple is rotten it will spoil the whole bunch' comes from.

Dear Lovely Banana Question,

The brown paper bags, used in this process, help to trap a natural chemical,ethylene, given off by the Bananas. This causes an increase in the rate of ripening. The lovely brown bag also allows for some ventilation for the bananas to ripen. Therefore with the help of an already ripen fruit, unripen fruit will ripe faster.

This is becasue the fruit that is already ripe will produce more ethylene inducing the unrippen fruit to ripe.

because when the banana is covered the absence of light cause the clorophyll in the skin to break down, thereby turning yellow. With this breakdown, the banana skin releases ETHELYN GAS which causes the fruit to ripen.
