Hotels: Book direct, not on booking engines. Look for the hotel you want (you can use the hotel and booking search engines to locate all the hotels at your destination) and then go to that hotel's own website.
Hotels have different rates: The cheapest rates must usually be prepaid and are non-refundable. The higher rates can be booked with or without a credit card guarantee (although some hotels do not accept non-guaranteed bookings). Even if you do guarantee with a credit card, take care to read the terms and conditions - you will usually be allowed to cancel you booking without penalty up to 24 hours before a specified time, usually 16h00, before the day of arrival.
The same applies for airlines: Cheaper fares are non-refundable, higher fares are refundable BUT you will find that the refundable air fares can be double the cost of non-refundable air fares. Be sure to READ the fare rules very carefully before you book.
