AnswerThis story began during the second world war when the British government wanted to explain away their success at shooting down German bombers and hide their use of radar. There is even some limited truth in the story. The protein rhodopsin found in the eye breaks down into retinal and opsin when exposed to light and reforms when back in the dark. Retinal is made up of vitamin A, which is found in carrots, and a severe lack of vitamin A in the diet can therefore result in night blindness.

The government was actually trying to encourage people to grow their own vegetables.

Yes, carrots can help human eyesight. Carrots contain the substance β-Carotene, which humans can metabolize into Vitamin A. Vitamin A is essential in proper retinal development, and has been shown to increase night-vision potential.
