If you find a heavy gauge string is bending the neck, then you are probably either tightening it too much or the string was not designed for the guitar. It is generally best to buy strings designed for a stratocaster and Fender make strings designed for certain guitars.

Instead of making a guitar from scratch, I think I would try to find a kit for a guitar, such as the kits that some music stores have for such instruments as the Fender Telecaster, Fender Stratocaster, and Fender Bass. These usually run $100-$150 for the kit. Other than that, you could try to buy all the components separately and assemble it, but it would be good deal more expensive that way.
okay, for example, there is the Fender Stratocaster, this is a very common and popular guitar. Guitar companies who make beginners make whats called a "strat immatation" this is a guitar which looks pretty much identical to the real thing, but is a knock-off
I would suggest an electric guitar as they are easier to start playing and would say something like a squire by fender stratocaster starter pack which includes an amp as well but if you are on a limited budget you may wish to get a similar then get an unknown branded product.
The Fender American Stratocaster comes highly recommended for beginners. They sound smooth and have a thinner neck. Epiphone makes a Les Paul style guitar designed specifically for beginners. Squier and Yamaha also make for a good starter guitar.
