Does fruit start decaying right from when you pick it?

fruit start decaying the minute it is picked and exposed to the elements. the less harsher the elements the less is decays. for instance if you put a fruit in a vacuum (a box that is empty of of matter including gases except for the object placed inside) it would not decay at all.
