MUSTARD: According to Frenche's website: "Dijon & Horseradish Mustard will lose heat and distinct flavor, so we encourage refrigeration for both. For all other mustards, refrigerating will help maintain its flavor; however, it is not necessary if you prefer your mustard to be room temperature. There are no ingredients in mustard that spoil. "Refrigerate After Opening" is not required for food safety. It is recommended to maintain optimal product flavor.

When you very first buy ketchup in a bottle or other type of package, you can keep it at room temperature. Once you open it though, it does need to be refrigerated. I tried to keep Whataburger ketchup (unopened) in the pantry for a few days and it did not look good afterwards. I would most certainly recommend refrigeration.

If the label on the packaging recommends refrigeration after opening, then refrigerate it after opening. Ketchup/catsup recipes are usually considered an acid food and might prefer refrigeration for extended quality, not for food safety. (My mother never refrigerated the ketchup/catsup.)

Mustard recipes can vary. Do whatever the label recommends for storage. Most recipes contain enough vinegar to make them shelf stable, but refrigeration extends the usable quality of the condiment and does not necessarily make it any safer.
