Probably only if you start from a very poor level of fitness. Bike riding is mainly about endurance, while sprinting is all about explosive power.
There can be secondary benefits though, if the added exercise of the bike riding is enough for you to lose some weight, then that will help in sprinting. If you use the bike riding for interval training(i.e. go flat out for a short period, rest a little , then go flat out again) then it can help a little too.
For mountain biking, it is best to use a bike with multiple gears, specifically a wide range of gears that include both low and high gears. This allows for easier climbing on steep terrain and faster speeds on flat or downhill sections.

It's more a question of "different" than outright "better".If you want to use your bike to get around with, then a mountain bike with gears and bigger wheels is better. It will be faster, less fatiguing and offer greater rider comfort. But if you want to do BMX style riding, with jumps and tricks and that, then a BMX is a better choice.
