In the UK, a 'serving' of fruit or veg is defined as 80g worth, regardless of what the fruit or vegetable is (or the size/age of the person eating the portion). It's a rather arbitrary system, and according to this system a large carrot is at least one serving (although most likely it's 2). Due to the arbitrary-ness, it's probably best just to use common sense as to what a portion is.
Yes it is best to cut the carrot up as the horse could take too large a bite from a whole carrot and accidentally swallow it and choke which will require an emergency vet visit. You can cut the carrot into 'bite size' pieces which are about the same size as a human finger.
The carrot is a fierce predator that eats its prey whole. It scares the heebie jeebies out of three-year-olds. Yes, I am scarier than a carrot, fear me!
Because cows tend to swallow their food whole and a carrot needs to be chewed first in order to be swallowed and digested. A cow would choke if she were to eat a carrot whole.
Yes, Carrot muffins are healthy. Healthy carrot muffins made with whole wheat flour, coconut oil and maple syrup. These muffins make a great, quick breakfast.

Louis, I think.... he was the one who started the whole carrot thing....
Technically, yes. If you plant a whole carrot root in the spring, the aboveground portion will produce seeds, which are botanically considered the product of a fruit. This is how commercial volumes of carrot seed get produced.
