Depends on which email program you are using.... I'll use yahoo for this example, and it is close in most of them. 1. Either on top of the email or at the end of the email it will say download picture(s). 2. a box should open up asking if you would like to open or save, if you want to open it and only look at it, then hit open. If you want to save it on your computer, then hit save and it will then ask you where you want to save it, save it to your pictures folder or your desktop.
If you want to save photos from an email or website on safari, you can put your finger on it and hold it til something pops up that says: 'Save Image' 'Cancel'. then you push save image. hope i helped.
