It is a caramel made from sugar and milk that originated in Argentina. The process of making dulce de leche is by dissolving sugar in milk and boiling it for several hours or until it carmelizes. Some people also use a risker method of boiling a can of sweetened condensed milk. Dulce de leche is enjoyed all over South America, and is sometimes made with goat's milk (cajeta) in place of cow's milk. Dulce de leche goes by many names. It's enjoyed as a filling in pastries, empanadas, on bread and as a dessert topping on top of fruit or ice cream. In 2003, Argentina lobbied UNESCO to label dulce de leche as one of its traditional products, and Uruguay followed suit.
