In animals: The lungs... they inhale Oxygen, which then passes into the bloodstream, through tiny capillaries in the lung lining. Some blood flowing through the lung lining has excess carbon dioxide, which is passed through to the lungs and exhaled.

In plants: carbon dioxide is absorbed through small openings called stomata. During the day photosynthesis uses it in combination with sunlight to produce energy. At night, without sunlight, the process is, sort-of, reversed, and the stomata release carbon-dioxide.

The lungs do not exchange oxygen and carbon monoxide. They exchange oxygen and carbon dioxide. They do that in the aveoli.

Why is not possible to stop breathing voluntarily?

Breathing is the only process where exchange of oxygen and carbon dioxide occurs. Oxygen is being delivered to the body parts where oxygen is needed, whilst removing carbon dioxide.

What is diffusion of carbon dioxide out of the blood stream?

That is a natural physiological process that occurs in the lungs. It is usually referred to as gas exchange, where the blood is enriched with oxygen as it looses most of its load of carbon dioxide.
