The cell membrane is made up of a variety of molecules including phospholipids, proteins, sugars, and other various building blocks. Fluid mosaic refers to the ability of these elements to shift about the cell membrane, which is ever-changing. Much of the ability to shift comes from the unsaturated lipid chains in the cell membrane, which have kinked structures that prevent the phospholipids of which they are a part from packing tightly together. The fluidity of the membrane is essential for some small molecule transfer between the inside and outside of a cell, as well as the activation of some important pathways which require molecules embedded within the cell membrane to either split or join.

This membrane is called the fluid mosaic (more than one thing) model as it is a mixture of phospholipids, cholesterol, proteins and carbohydrates.

The proteins sort of float on the surface of the membrane like islands in the sea.

Cholesterol is also found in the membrane. It prevents lower temperatures from inhibiting the fluidity of the membrane and prevents higher temperatures from increasing fluidity.

The carbohydrates that are in plasma membranes are bound either to proteins or to the lipids. They form sites on the surface that allow the cells to recognize each other.

The lipids molecules that form the membrane are fluid. They can move about relative to one another in a fluid manner. Some of the proteins are also free to move about sothat the mosiac or pattern of lipids and proteins changes. Because of these characteristics scientists call their model of the dynamic cell membrane the fluid the fluid mosiac model.

The membrane is a bilayer of phospholipids. Because the tails are hydrophobic they interact with each other and occupy the inner membrane away from water. The polar heads are the exterior and interior of the membrane since they interact well with water. The phospholipids are not rigidly locked in place and therefore always are moving hence fluid. The membrane is also studded with proteins that perform various functions hence the mosaic.

The fluid mosaic model states that proteins float in a sea of lipids.

A cell membrane is composed of lipids arranged with their hydrophobic tails touching each other, with proteins scattered throughout. The proteins may either be integral, meaning that they span the entire membrane, or peripheral, meaning they stay outside of the cell only loosely associated with the membrane.

This membrane fluidity can be experimentally showed using a technique called FRAP (florescent recovery after photobleaching).

Things that effect membrane fluidity include:

lipid tail length - shorter tails = more fluid at low temps

degree of saturation - less saturation = more fluid at lower temps

Also, cholesterol tends to keep membranes at an intermediate fluidity.

The bilayer is embed with protein instead of it being coated on the outside. There is also a double layer of fats or phospholipids that have the tails facing inwards.
