I've been to countless exhibitions. The one thing to remember is SPIT! There can often be an overwhelming number of wines to try and you don't want to be the person that ends up naked in the fountain. Also, be aware of the theme of the exhibition. If it's a white wine theme, you'll be able to try and appreciate many different wines. If it's a zinfandel tasting, your palette will be shot after about eight wines.
