Only Gretsch can build a Gretsch guitar. You might want to build a copy of a Gretsch guitar. There are quite a few different models, most of which are acoustic or semi-hollow bodied. To make a hollow-body guitar requires a lot of craftmanship.
You might want to start out building a solid body guitar, which is much easier, but you will get familiar with some of the woodworking techniques used in more advance guitar making.
If you start with a solid body guitar, you are pretty sure to finish up with a good playable guitar, which will help motivate you to continue improving.

There aren't really. Semi acoustics like a Gibson 335, Casino, etc. or Gretch's are your best bet.
