No once you update you cant go back to a previous version unless you find it somewhere elsewhere than itunes.
You can go back to version 8 or 7. At the bottom of this page is a link to Internet Explorer download page where you can get the older versions.
The old version of iTunes does not need to be deleted as the new version will update it to the latest version.
