Depends on the subgenre of metal music, but great majority of modern metal music uses triggered drums, so what you hear on record is not what the drums sound in nature. If it is slow, AC/DC or Mötley Crüe kind of hard rock music, the drums are tuned quite low. If it is extreme metal like Nasum or Cannibal Corpse, the drums are usually tuned a bit higher than usual and triggered because the human physique just can't keep up with the consistency needed by the music genre.
