Everyone will make shoestring fries differently, but there are some basics. One would need to cut a potato into super thin strings. This could be done with a mandoline. Once that is done, one can put whatever spices they wish and cook them in the oven or deep fryer.

They should. In fact, you should be able to do better, because you probably won't be using the cheapest grade of cooking oil, and won't be re-using it over and over again. You can also cook something other than the standard shoestring fries. Deep-fried steak fries - yum!

McDonald's french fries are exactly that, fried french-cut potatoes.
Curly fries are made the same way as french fries but are sliced with a twin potato curl cutter instead of a knife.
