Ford was probably the first to implement "Assembly line" production in the car manufacturing business, the development of assembly line method of production is arguably attributed to Ford.
Now most cars made today follow the same basic method, except for some high-end manufacturers, most of how produce a limited number of cars annually(~20 per annum is a fair guess ), what has changed though is the technology advancement of the decades since Ford first implemented the idea.
Initially assembly line allowed for easier transport of product parts through the company passing from being a raw material to a finished product much faster and more efficiently than possible before that time.
What has change is that in the times the assembly line passed through people doing the work , for example workers fixing the windshield and what not, while today its much more automatized with robotic hands doing most of the work.
In one sentence, the change was that previously the transport of the product was automatized while today most of the production is.
Also a notable change, is the use of new materials and technologies ( take the wind tunnel for example, a method of measuring air resistance in relation to the shape of the car ) that were not available before.
