When creating a map that is a flat representation of a sphere (The World), there are many methods and types of projections. There are any number of possible projections and every projection distorts the world is some aspect. One projection will make one part look right at the expense of another part. Some projections are acceptable and some are considered unacceptable. The US appears bigger than Africa and other places due to the specific projection minimizing the other countries and making the US appear bigger. Presumably, since the US is high in capital it has the power to make many world maps and it likes to appear more powerful or bigger etc. so it uses that projection.
