While baking in the oven, moisture and water in the batter heats up as the cake bakes. The heat turns this moisture to steam. Steam expands and rises, trying to escape. The cake contains the steam inside it, so the cake rises and becomes airy.

When a cake is baked, it heats up. There is moisture inside the cake. This comes from the batter (things like eggs and milk and butter), along with all the water that is in the cake. The water, when heated, turns to steam. Steam, or hot air, expands. Since there are little or no openings in the cake for steam to rise out of, it causes the cake to puff up and rise as it expands with the steam.

The batter has baking soda and or baking powder in it which releases carbon dixoide gas that is trapped in the cake making it fluffy.

baking powder makes a cake rise because of the elements made from that powder. the powder releases gas which slowly dissolves in the texture and makes it rise
