If you mean "which organs can you live without", there are several: many of your glands, your uterus, your ovaries, your testes, your external sex organs, your appendix, your spleen, your gallbladder, your tonsils, some of your lymph nodes, your colon (with a colostomy), your pancreas (with supplemental pancreatic enzymes and some hormones) and even your kidneys (albeit with dialysis), and . I might have forgotten some - it's a miracle what modern medical science can accomplish.

Without their liver, no, not without some sort of medical technology, and perhaps not even then. Without one kidney, yes, quite easily in most cases. Without both kidneys, no, again not without some sort of medical technology (usually a kidney dialysis machine).
It depends on the local climate, and exactly what you mean by "shelter". In some climates, there's no real reason you shouldn't be able to survive indefinitely without shelter.
