By using two systems.

Firstly the body of a scorpion is covered in sparse, course hairs that are very receptive. These hairs can pick up fine vibrations in the air (such as a moth of beetle landing somewhere)

Secondly on the underside of the body, a scorpion has two feather-like structures called pectines. These structuires can pick up vibrations on the ground (eg a beetle running) as well as chemical trails left by insects. The pectines work like a little GPS and tell the scorpion exactly where it is in relation to it's prey.

How will a cricket defend itself against predators?

Anecdotally, I threw in a cricket as prey for a scorpion in a glass jar I captured at my apartment, thinking the scorpion would eat it. The scorpion was pretty young, and not much larger than a nickel, but I thought it would be sure to kill the cricket, which seemed like easy prey. I forced them to come into close contact, and the scorp stung the cricket, which started jumping around like crazy trying to flee. I came back later that day, and the cricket was dead as a door nail, still in tact. The scorpion, on the other hand, was missing legs, and it's tail and had been separated from the rest of its body. So much for trying to keep a pet scorpion! Lesson learned: crickets are surprisingly tough insects!

What should people do if they encounter scorpions?

All scorpion species possess venom. In general, scorpion venom is described as neurotoxic in nature. Scorpions use their venom to kill or paralyze their prey so that it can be eaten; in general it is fast-acting, allowing for effective prey capture. The effects of the sting can be severe. However, scorpion venoms are optimized for action upon other arthropods, and therefore most scorpions are relatively harmless to humans; stings produce only local effects (such as pain, numbness or swelling). A few scorpion species, however, mostly in the family Buthidae, can be dangerous to humans. Just remember, avoid the small ones (their the deadlier kind) and you can trust the big ones.
