Thats's not an easy question to answer ... Lets assume, it takes the space telescope one second to take a picture of a single galaxy in a usable resolution (we are not talking about 1 galaxy per pixel, here, are we?) 100000000000 galaxies / 3600 sec / 24 hrs / 365 days is roughly 3171 years. Even with a thousand galaxies on each photo, it would be over 3 years ... So, well, yes, the Hubble telescope could take a mosaic photo ... but either it will take forever or you will only see a small number of them ...
