It is all about the bacteria or pollution in the water (I guess the tea also). If the water is tap water, it is chlorinated and will stay fresh longer than rain or river water. Boiled water stays fresh until some type bacteria or pollution is introduced into it. Steeped tea has a shorter shelf life than boiled tea, but tastes better.
