How would stem cell research cure diabetes?

Before I answer, keep in mind that these are my own theories and ideas, based on little research. However, my understanding is that, since stem cells can specialize to form almost any type of cell, it is possible that they could be manipulated into becoming an organ, in the case of diabetes, a pancreas. As long as this pancreas worked properly, a diabetic could have it transplanted with the one they have already, and hopefully it would cure it. There's a lot of controversey surrounding stem cell research, though, so I doubt it'll happen too soon.
