If you are talking about phase change from solid to liquid to gas, it is temperature. If you are talking solid state phase changes (rearrangement of the crystal structure), there are a variety of things but temperature is still a very important one. Other things include pressure, deformation, composition changes, corrosion, radiation, electric fields, and magnetic fields.

Let me give you an example:

Take a piece of paper and rip it. The paper has now undergone a physical change because it is still the same piece of paper, but it looks different than it did before.

Take a cookie and break it. That is also a physical change. You still have the same cookie as before and it will still taste the same. Everything about it will be the same except for how it appears. That is what a physical change is.

A phase change, or state change in matter is caused by a change in the amount of kinetic energy present in the substance. A very low amount of kinetic energy will be present in the solid state (or phase) of a substance, while a higher amount of kinetic energy will be present in the liquid state, and an even higher amount still will be present in the gaseous state. Changes between states are dependent on the substance itself, and more specifically the bonding force between molecules of the substance. As a solid gains kinetic energy, bonds between molecules begin to release themselves, and at a particular point (called the melting point or melting temperature), the bonding force between most molecules is counteracted by the amount of introduced kinetic energy, and the solid becomes a liquid. Inversely, as a liquid looses kinetic energy, bonds betwen molecules of a substance will begin to reform, and the liquid will once again become a solid (this is called the freezing point of freezing temperature). A similar state change occurs from liquid to gas, and gas to liquid.

Kinetic energy can be supplied to induce state changes by various methods, but the most common method is by the introduction of heat or cooling.
