A fairly accurate two-point calibration (if the sensing element is submersible) can be achieved by using an ice-water-salt solution to calibrate to 32F, and using boiling water to calibrate to 212F (corrected for atmospheric pressure at your location).

If you live in a metric part of the world, your calibration points would be 0C and 100C, of course.
