It can help the animal camouflage in the terrain. By camouflaging (blending in) it will have a greater chance of stalking up on prey-- which then means more food-- and it will have a less chance of being caught by predators.

A light colored field mouse on a dark background would have a much reduced chance of survival and, naturally, reproductive success. Mice darkly colored here would do much better, but mice half way between the two colors would do best of all in a shifting colored environment. So, variation in the populations gene pool could be maintained as long a the environment varied, or some genotypes maintained at a lower frequency if predation was not that sever.
