yes

On hot dry sunny days they do because they are losing more water through the stomata. this is because of transpiration and hot dry winds tend to blow the water exiting the through the stomata away, causing more transpiration. also on hot dry days the water potential in the air surrounding the plant tends to be lower creating a higher transpiration rate as well.

as water is lost, the guard cells of the stomata become flaccid which closes the guard cells to prevent further loss of water through transpiration. though this is also what makes the plant look wilted

Wilting closes the stomata underneath the leaf so prevent further transpiration, in the short term this a defence mechanism so yes wilting can be beneficial.
