If you didn't already get the Master Sword, then you can only be a wolf when you first transform into one and when you are turned into one by the twilight when you enter a new area. If you DO have the Master Sword, then just press Z for GC version and up on the D-pad for Wii version and choose it.

∙ 12y agoyou must hit exactly 10 cucoos then warp to gerudo mesa after you have to die 100 time. When you are at the title screen erase file then make a new one. once you log in at the new file you will leave off where you where the shield will de on your back press Z and wolf link will roll up and show his shield.
