No fat calories are a proportion of how many fat calories are in the total calorie count. So on the label of some food, if it says 100 calories, 50 fat calories, that means there are 100 calories, but 50 of them are from fat.
If you are counting calories, you count all calories including the calories from fats. However, bear in mind that (unlike carbohydrates) you do need fats and proteins in order to flourish physically. That is one of the reasons it is healthier to count carbohydrates rather than counting calories.

...No. But calories are, remember, energy. And much more healthy than energy drinks and the sort.
I recommend counting calories for everything especially fruit as it contains sugar. One banana has around 100 to 120 calories and around 27 grams of carbs. If you eat 3 to 4 bananas a day then you can get more carbs than you know if you don't count. It's also good to count everything you eat if, for example, you're not losing weight then you can go back and see how many calories you were eating the days prior. That can tell you if you need to adjust your calorie intake by lowering it.
