The saddle should have a nail head near the pommel on an English saddle, this will tell you the maker, if there is no nail head then look under the flap, it could be underneath.
On a western saddle it can be underneath, on the stirrup fenders, or somewhere else on the top of the saddle as location can vary by maker.
For bridles it can be harder to tell. Look on the underside of the bridle and on the crown piece as they can be stamped with the emblem of the maker or a serial number.
