You can add a small amount of sugar to sweeten the stock, however it is better to prevent the bitterness in the firstplace, the tail of the chicken (called the parsons nose) has a gland which will turn your stock bitter, remove this before you put the chicken carcase in the stockpot.

Take the required black beans that you want to cook. wash them good and now put them in a pot/pan over fire and let the water come to boil once.
get the pan off the heat. wait for the water/beans to cool ( about 1 hour).
rinse them good. now when you make the soup with black bean you will not have the bitter taste anymore.
