You can cut into it to be sure it is brown. With a meat thermometer, you can measure the proper temperature for its being done (180?). Finally, an experienced cook will note by the feel of the sausage that it is done.

It is past the 'Use By' or 'Best Before' date on the package in which it came. It smells bad or it has changed colour.

If sausage is bad, it will usually have a bad smell. It may also have mold growing on it, as well.
