Beef muscle meat not exposed to oxygen (in vacuum packaging, for example) is a burgundy or purplish color. After exposure to the air for 15 minutes or so, the myoglobin receives oxygen and the meat turns bright, cherry red.

It will start to stink n turn a different color.

Sometimes a store ground product is packed a little too tight. This will cause the inside to lose it's oxygen and lose it's bloom (bright red color). To restore the bloom, expose it to air for 5 or 6 minutes.
Smell it! It's cooked and the harmful germs are gone. If it smells bad it won't taste good. The dog and cats might like it. Use my rule, if you think it might be bad it is bad
1st., the smell then the color is a dusky brown like gray. If in doubt, throw it out.
