While the Apostles seem to generally "fade out of the picture" as far as the point of view of Scripture is concerned, they themselves, and their ministries, in no way faded historically. They all went on to gospel ministries in the far corners of the known world, most, to die martyrs' deaths. Paul might have remained in obscurity in Tarsus except for the intervention of his champion, Barnabas. Barnabas apparently thought Paul would be a good addition to the ministry team in the "happening" church in Antioch. Paul's prominence in Scripture was totally inadvertent, that is, it wasn't anything he himself sought.

24 For he [Barnabas] was a good man, and full of the Holy Ghost and of faith: and much people was added unto the Lord.

25 Then departed Barnabas to Tarsus, for to seek Saul:

26 And when he had found him, he brought him unto Antioch. And it came to pass, that a whole year they assembled themselves with the church, and taught much people. And the disciples were called Christians first in Antioch. (Acts 11:24-26)

AnswerQuite simple really: Paul both wrote letters which were copied and circulated, while most of the other disciples didn't leave a written record and so were soon forgotten.
