There are a few reasons why its quite difficult to see Mercury.
Its the closest to the sun, so will never be far from the sun from our view point. This means that you can only see it soon after sunset or just before sunrise, when the surrounding sky may still be quite bright. You wont see it high in the night sky like Jupiter, which can be away from the horizon where you have to observe through more of the earths atmosphere. Although closer to us, its also very small when compared to Jupiter. Also, because Jupiter is further out, we alway see the whole face of it (more or less), while mercurys orbit is inside ours. As it comes around the sun and starts to come in front of us, we only see the part of the planet that is receiving sunlight- like looking at phases of the moon.
