He doesn't. He challenged the usurper, Iofur Raknison, to a one-on-one battle to the death. Iorek survived and gained his rightful place as king of Svalbard. He remained king over the Panserbjørne through the end of the series.
Iorek Byrnison does not die in "The Golden Compass." The armored bear is a significant character throughout the book and plays a key role in helping Lyra on her journey.
Asriel used Roger to open the porthole between the worlds, and killed him doing so. It is at the very end of the book, around the last two or three pages. This is absent from the movie.
Lord Asriel created a bridge to the stars. In doing this he killed Roger and luckily not Lyra. And near the end it says he was lying dead in Lyra's arms which proves he died.
